Roti Jala is a traditional crepe-style bread made in a delicate lacy net or a spider web appearance in Indonesia, Singapore and Malaysia.
This dish is not easily found in restaurants or on the street because it is considered a special celebration food. This dish is actually one of my mom's must-have celebration dishes. With the delicate net-like look, it might intimidate you to think it’s hard to make. But it is relatively easy and simple, just like making any other crepes recipe, except you are using coconut milk instead of milk and adding some turmeric for a more savory flavor. You serve the bread with a curry dish, grab and dip it, then take a big bite.
Ingredients
300g (about 2 1/2 cups) all-purpose flour
1 teaspoon salt
1/4 teaspoon turmeric
1/2 teaspoon coconut sugar
1.5 cups thin coconut milk
1 cup water
3 large eggs
2 tablespoons light vegetable oil
Oil for greasing
Directions:
Whisk all ingredients in a bowl until they mix, and there is no lump. Using a funnel and ladle, transfer the batter into a bottle with a special nozzle to make the net pattern.
Heat a flat pan on medium-low heat. Brush some oil on the pan. Once the pan is hot, press the bottle and move it fast and constantly in a circular motion.
Cook it for about 2 minutes on each side.
Transfer to a plate and fold them to your desired shape. They usually fold it in a cylinder roll shape, but I like to do mine in a triangle fold.
